Why does schengen visa processing take 2 weeks?

I am applying for a schengen visa from the US and the standard processing time is about 2 weeks. I am curious to know that if the interview officer approves you, why does it take them 2 weeks to put the stamp on your passport. Why can't they give the passport back in a few hours after stamping it.
